Citrus Shortcakes
Featuring Natalie's
Orange Juice
Ingredients
- 8oz Natalie's Orange Juice (reserve 2 tbsp)
- 3 clementines peeled and separated into individual segments
- 1 can of biscuits (or your favorite homemade biscuits)
- Zest of 1 orange
- ½ cup heavy cream
- Mint for garnish
Directions
- Bake the biscuits according to the package directions and allow to cool.
- In a saucepan pour in the Natalie's Orange Juice reserving 2 tbsp of the juice off to the side.
- Over medium high heat stir the juice continuously until a syrup forms. About 10 minutes.
- In a mixing bowl pour the orange syrup over the peeled and segmented clementines and allow to cool.
- When you are ready to serve combine the heavy cream orange zest and reserved 2 tbsp of orange juice in a mixing bowl. Beat using a hand mixer for 1-2 minutes until soft peaks form.
- Assemble the shortcakes by cutting each biscuit in half and topping one half with the clementine slices whipped cream a little extra drizzle of the syrup and the top of the biscuit.
- Garnish with a fresh sprig of mint.
