Autumn Salad with Lemon Cranberry Vinaigrette

Ingredients
Dressing Ingredients:
- 4 tbsp Natalie's Lemon Juice
- 4 tbsp olive oil
- 1 tsp salt
- ½ tsp pepper
- 1 tsp fresh thyme leaves
- 2 tbsp dried cranberries
Salad Ingredients:
- 7 cups spinach
- 2 cups butternut squash cubes roasted or steamed
- 1 apple sliced
- ½ cup blue cheese
- ¼ cup dried cranberries
Directions
- In a blender cup combine all dressing ingredients and blend for 15-20 seconds.
- In a large bowl add the spinach and top with the butternut squash apple cranberries and blue cheese. Toss well.
- Dress with the salad dressing right before serving.
