Autumn Salad with Lemon Cranberry Vinaigrette

Ingredients

Dressing Ingredients:

  • 4 tbsp Natalie's Lemon Juice
  • 4 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp fresh thyme leaves
  • 2 tbsp dried cranberries

Salad Ingredients:

  • 7 cups spinach
  • 2 cups butternut squash cubes roasted or steamed
  • 1 apple sliced
  • ½ cup blue cheese
  • ¼ cup dried cranberries

Directions

  1. In a blender cup combine all dressing ingredients and blend for 15-20 seconds.
  2. In a large bowl add the spinach and top with the butternut squash apple cranberries and blue cheese. Toss well.
  3. Dress with the salad dressing right before serving.
