Pineapple Coconut Sorbet
Ingredients
Yields 8 Servings
- 2 cups Natalie’s Pineapple Juice
- 1 cup full-fat coconut milk
- 3 cups frozen pineapple
- ¼ cup agave (optional for sweetness)
- Sliced pineapple for garnish
- Mint leaves for garnish
Directions
- Combine all ingredients in a food processor and blend until smooth. You may need to add a splash more pineapple juice to reach your desired consistency.
- Pour the mixture into a bread loaf pan and chill the mixture in the fridge for 2 hours.
- Scoop and serve with a sprig of mint and slice of pineapple.
