Mango Orange Olive Oil Cake
Ingredients
Yields 8-10
- 1 1/4 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 3 large eggs
- 1 ⅓ cup sugar
- ⅓ cup buttermilk
- ½ cup extra virgin olive oil
- ½ cup Natalie’s Orange Mango Juice
- 1 tsp vanilla extract
- Zest of 1 orange
- Powdered sugar for garnish
- Sugared orange slices for garnish
Directions
- Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.
- In a bowl, whisk together sugar, flours, baking powder, baking soda, and salt.
- In another bowl, whisk eggs, olive oil, juice, vanilla, and zest.
- Gently combine wet and dry ingredients until just mixed.
- Pour into pan and bake 45-50 minutes or until golden and springy.
- Cool and dust with powdered sugar and sugared orange slices.
