Mango Orange Olive Oil Cake

Ingredients

Yields 8-10

  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 large eggs
  • 1 ⅓  cup sugar
  • ⅓ cup buttermilk
  • ½ cup extra virgin olive oil
  • ½ cup Natalie’s Orange Mango Juice
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • Powdered sugar for garnish
  • Sugared orange slices for garnish 

Directions

  1. Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together sugar, flours, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, olive oil, juice, vanilla, and zest.
  4. Gently combine wet and dry ingredients until just mixed.
  5. Pour into pan and bake 45-50 minutes or until golden and springy.
  6. Cool and dust with powdered sugar and sugared orange slices.
